PINWHEEL COOKIES

You start with a basic sugar cookie dough:

¾ cup shortening (or use part butter)
1 cup granulated sugar
2 eggs
1 teaspoon vanilla
2 ½ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
Then you’ll need:
Red food coloring
Holiday sprinkles (optional)

In a large bowl, mix the shortening, sugar, eggs, and vanilla thoroughly. In a separate bowl mix the flour, baking powder, and salt together. Blend the flour mixture into the large bowl of the shortening/sugar/egg/vanilla mixture.
Divide the resulting dough in half.
Add 5 or so drops of red food coloring (or more to get to the desired color) to one half of the dough.
Chill both balls of dough at least two hours in the refrigerator.
After the dough has chilled, roll each ball of dough into a 12 x 9 inch oblong. Place the red oblong on top of the white one. Roll the dough layers until they are 3/16th of an inch thick, then roll them tightly up along the wide side. Place the roll in cling wrap and refrigerate the dough again for about an hour.
If desired, roll the entire log of chilled dough in sprinkles so the cookies have sprinkled edges.
Heat oven to 400 degrees. Cut the rolled dough into 1/8th of an inch-thick slices and place them on an ungreased baking sheet.
Bake 8 to 10 minutes and then cool on a wire rack. Makes about 7 dozen cookies.
